Pancake Recipes

THE TRADITIONAL PANCAKE

What you need:

  • 100g plain flour
  • 2 large eggs
  • 300ml milk (why not try a dairy alternative, such as oat for something different?)
  • 1 tbsp sunflower/vegetable oil + extra for frying
  • Note: this recipe serves 12.

Method:

  1. Whisk the flour, eggs, milk, oil and a pinch of salt together in a bowl until it forms a smooth batter.
  2. Set your pan over a medium heat and carefully wipe with oiled kitchen paper. When the pan is hot, cook your pancakes on each side for 1 minute or until they’re golden.
  3. Keep the pancakes in a warm oven whilst you finish cooking the rest.

DELICIOUSLY VEGAN PANCAKES

What you need:

  • 300g self-raising flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 1 tbsp vanilla extract
  • 400ml plant-based milk
  • 1 tbsp vegetable oil for cooking
  • Note: this recipe is for 16 pancakes.

Method:

  1. Whisk the flour, baking powder, sugar, vanilla extract and a pinch of salt together in a bowl. Slowly add the milk in until you get a smooth, thick batter.
  2. Heat some of the oil in a non-stick frying pan over a low to medium heat and add 2 tbsp of the batter into the pan to make smaller, round pancakes. We recommend cooking 2 to 3 batches at a time.
  3. Cook for 3 to 4 minutes until the edges are set and bubbles appear on the surface.
  4. Flip the pancakes and cook for another 2 to 3 minutes until they are golden on both sides and cooked through.

PRACTICALLY PERFECT PROTEIN PANCAKES

What you need:

  • 1 banana
  • 3 large eggs
  • 75g oats
  • Pinch of cinnamon
  • 2 tbsp milk
  • 1 tbsp baking powder
  • 2 tbsp protein powder
  • Coconut oil for frying
  • Note: this recipe serves 2.

Method:

  1. Blend the banana, oats, eggs, milk, baking powder, cinnamon and protein powder in a blender for 1 to 2 minutes or until it creates a smooth mixture and the oats have broken down.
  2. Heat a drizzle of oil in a pan and pour 2 to 3 lots of batter, leaving enough room for the batter to spread.
  3. Cook for 1 to 2 minutes until bubbles appear on the surface.
  4. Flip the pancake once the underside is golden and cook for another minute until cooked through. Keep the pancakes in a warm oven whilst you cook the remainder.

Once you have finished cooking your pancakes of choice, serve them with your favourite toppings. Whether you’re a traditionalist and can’t go without a dash of lemon and sugar or you prefer to go all out with fruit and melted chocolate, these pancake ideas are a recipe for success.

Pancake day never tasted so good!
